I have recently been trying out a cute crockpot--it's only 1.5 quarts! It's the perfect size to make 2-3 servings of something. So far I've been making soups...black bean, chili, and vegetable. Preparing the soup is super easy. For the vegetable, I just put in a cube or two of vegetable broth mixed in water, and a couple cups of chopped veggies (carrots, celery, green beans, onions, etc.). I did add some fresh basil. Then, turn it on (I used high setting) and in 4 hours or so it's ready! (Of course, there's a low setting also, which will be handy.) Here is a picture of it:

I know I'm not the first one to use a crockpot. :-) I am getting ready to go back to work on Friday, though, and really need some ideas for easy-prep dinners. I sometimes teach classes that are 2 or 3 hours at a stretch, and my arthritis often flares up, making it hard for me to be enthusiastic about cooking when I get home. I know this contributed to our less-than-healthy eating habits in the past year.
Any other ideas are appreciated! We're vegetarian, doing low-carb/high-protein.
I'm ready for the fall weather to ramp up so that I can use my crockpot. Its ready to be dusted off.
